Title: Cooking with "Blues"

 Is anyone cooking with their blue cheeses? We had shredded smoked pork butt sandwiches the other day and warmed a little butter and a lot of blue to drizzle on them, wow was it good!
  Any favorite recipes using blue cheeses ?

I find that when heated blues really loses alot of its "potency"\"pungency" but still I love it inside a grilled sourdough bread  or top of pizza along with a nuetral cheese like mozz.

Also works great with meats as you noted.

Put it on top of a smoked burger, mix it with a blend of cheeses for a pizza, make a hot sandwich with granny smith apples, bacon and turkey.  ^-^

Pizza with blue, onions and caramelized walnuts with a cream base... That's my idea of comfort food :p

Going to have blue-onion mini tarts this weekend, wanton wrappers tucked in mini muffin tins, then lightly cooked(350 for ten min.), add caramelized onions and a bit of blue cheese, bake at 350 till cheese is melted and wanton is lightly browned.
