Annie, the Normande breed is used for AOC camembert production. Can't speak for Brie.
(also, sorry, been away for several days - not ignoring your query on Beaufort cultures....and also, it's a work in progress. Suffice it say that for now, I only inoculate with 1% 50-50 TA61/LH100, and a small amount of p. shermanii; I depend on the rest, with the mesos in the milk I source).
Where are you and what kind of milk do you get?

Hi Annie,
Traditional Brie was made in the areas Meaux or Melun, which are close to Paris (Brie is actually a region of France).
I think (but am really not sure) the milk comes Prim'Holstein cows. Again, that is to be confirmed...

Seine-et-Marne (Brie) and Normandy (Camembert) are relatively close
to each other. If I remember correctly, it takes only an hour or so to drive from one to another. It's been many years.
And I thought that since they were so close to each other, they might
have some breed of cows in common. Does any know?
