Title: Cottage Cheese - Grainy In Morning

I made some cottage cheese yesterday. Last night I mixed in the herbs and salt & it was nice and creamy. This orning it is all crumbly and seems to have alot of grains in it. It almost looks like it's got maize meal in it. Any one know why this happened?
