Title: Brie Making - Geotrichum candidum Required?

Hi there!

This is my 1st brie cheese. It is into day 8 of molding now. The recipe says that after 15 days it should be covered completely.
I would like to know if it's worth getting GEO17 mold to assist the penicillium molds or not. The reason I ask this is because my supplier only sells it in stock for 5000 litres product & that's way too much for me.
