Title: Hello from the Southwest

Hi- I'm so happy to find this forum, which looks excellent! I found you while searching "using beeswax on cheese." I've had goats for 6 years or so and I'm finally branching out to make some cheeses other than feta and chevre-- I got a little wine cooler for aging cheeses so I'm trying cheddar, parmesan, etc... and will surely have many questions! For instance, how to make a natural rind instead of using any wax at all.....

Anyway, I look forward to participating in the board.

Welcome fellow Southwesterner. I have had goats for 10 years, been making cheese for about 5 years, this will be my third year with aged cheese. So much help in this forum!!!
