Hello all,

Live in the DFW area an am looking at adding some cheese skills to my cooking.  I have a fondness for learning skills a lot of people think are archaic such as charcuterie, knife making and several other older crafts.

I have picked up a motz kit to start with and plan to go to the classes at http://homesteadheritage.com/ (http://homesteadheritage.com/) .

I look forward to being able to smoke my own homemade cheeses.

Welcome to the forum, Jim. Sounds like cheese making will fit right in with your interests.
