Title: Gelato Making - Pistachio Fudge

Mixed up a double batch of gelato custard and decided to make a pistachio with chocolate fudge chunks for dessert tonight. I used the basic Gelato Di Crema but added 1 tablespoon of pistachio extract in addition to the vanilla and a few drops of green food color and let it chill while I sliced the beef for supper.

Then I made the pistachio paste – just put about  2 cups of pistachios in my mini little chopper blender thingy and turned it into a paste with about 1 tablespoon of water and 4 drops of green food  color.

Put it in the gelato maker to freeze for 30 minutes

At the very end I added about 2 tablespoons of a thick cocoa fudge sauce I whipped up for clumps and put it in the freezer while I did the cleanup and we ate supper. (I'm learning!)

Here it is. Really good and creamy! One of my favorites.
