I am pondering a double compression press for molding/pressing hard cheeses like cheddars, etc...want to store presses on a horizontal for drainage, with compression working WITH gravity, 100-200 pounds. Is there anything like this out there already? Dont want to reinvent the wheel if I dont have to! I can work with wood easily, metal is a little more difficult for me as I have no welding skills, but...am tired of my small table top press that never gets the cheeses firm enough! And I am flush with goats milk for at least another month, so want to get busy making cheeses that will hopefully last...until they have SOME age at least!

Search on the forum for presses, psi, and weights for information on pressing hard cheeses. There are all manner of press ideas for easy & on-the-cheap and more involved & a little more expensive.
