Title: Penicillium candidum Cheeses - Impact Of Adding Brevibacteria linens?
Post by: Homestead on July 15, 2011, 12:19:33 AM
I'm wondering what would happen if I added B linens at the same time as the PC to my crottins?  Also would I have something edible?  Thanks ahead of time for all the help!

From iratherfly's suggestions last fall, I have been using Danisco PLA with my crottins.  There is a culture spec sheet on the site and it lists B. linens as one of the components.  I have been ordering PLA from the Dairy Connection in Madison - it's not listed on their website so you'll have to call and speak to one of their great reps.  I've been very pleased with the results

Good luck
