Title: Feta - Floating In Brine?

floating feta! My feat has been sitting in a brine for about 3 weeks now, and all of a sudden it has started to float! is this normal?

Yep, it soaked water from the brine and started to float. All my fetas float as I don't drain much from time to time. Also may be just may be, some gas producing bacteria producing carbondioxide.

Oh BTW, your feat should be growing some good bacteria now that you can remove it from the brine, your shoes will smell just like your feta  ;D (sorry couldn't resist)

Ditto, I've been using ~14% brine and all my gravity drained unpressed feta batches floated as soon as emersed in the brine.

HAHA! yea my feat are aging quite nicely...they have developed a musky... barnyard flavor that is actually quite pleasant! haha...oopsies!
