Title: Stilton - Unwanted White P Candidum Mold

Hi,

The photos shows two Stiltons which i am maturing. The one in the background is nearly ready and looks OK but the one in the foreground which has 6 weeks to go has a new mold on the surface which i have not seen before. It is bright white and now spreading quite quickly. Has anyone esle seen this beofre and if so is it something to worry about?

Is it fluffy growing out? Or is it like carpet spreading fast?

Looks like PC to me. How does it smell? My blues also grow some PC on the outside after a while.

Hi,

It is not fluffy its more like carpet speading. It does look remarkably like PC although i have never used it . Is it naturally occuring?

Sorry forgot to say that i can't really detect a scent. The smell of the cheese itself is too strong

I think it is safe to eat, I think it is PC. It may occure naturally though I can't say exactly as I have almost all the lactic bacteria and some more present in my house.  ;D

If you are in doubt, cut the rind and smell the cheese inside when it comes to its eating age.
