Title: Caciotta Cheese Making Recipe?

During a trawl on google earlier today, I came across an Italian semi-hard cheese called caciotta. I have tried to find a recipe, but have had no luck. Is there anyone out there who has one and is prepared to share - it looks an interesting cheese that I would like to try.

Yes, it looks great.  I read that they smear the rind with tomato paste or some such thing to get the reddish color.  Very interesting.
