Title: lipase addition?

Has anyone ever added lipase to a lactic cheese before...if so what was the outcome?   Thanks again!

Not Lipase since my supplier didn't have, but used Helveticus and it seems to give the cheese a taste that I don't like. It tastes better without it for me.
If you have it, make a small cheese and see what happens.

A tiny pinch will add piquant notes. Anything more tends to cause bitterness and off flavors.

i added lipase to a toma and came out with tomalone...quite good with a provolone finish. vic
