Hello.

Can you please help me, what exactly is a "cheese brush" ? I know only that it must be soft,
but how much and made from natural bristle or can be other ... I'm talking about aging brush,
not the one for waxing. ;) Thanks.

there are different kinds depending on if you want to scrub, wash, etc. Depends on the cheese. Most good ones are nylon or some type of HDPE/PP/Nylon blend.

then you need an all-purpose, medium stiffness brush that would enable you to spread the morge.

It's not some super secret brush.... heck, you can even use a rag

You can even use of these newfangled contraptions and put the morge inside

Any type of brush. You want to scruff up the cheese more? Use a harder bristle. Want to baby it and just use it to spread the morge around? Use a soft bristle, even something out of horse hair.

If you want to kick it up a notch DIY style, you could also mechanize (not for the morge phase, for the rind clean up pre-sale) and hook one of these things up to a drill http://www.amazon.com/Revolver-DrillBrush01-Drill-Brush/dp/B002DLRN72/ref=zg_bs_15342891_19. (http://www.amazon.com/Revolver-DrillBrush01-Drill-Brush/dp/B002DLRN72/ref=zg_bs_15342891_19.) Gets stray molds, cheese mites, etc right out.

I don't think that one day I will sell my cheeses! :D But thanks! I have now
6-7 months ahead of understanding how to wash cheese with brine and how
to understand which mold is good and which must be removed ... I'm sure I
will have a lot of questions soon with this Gruyere. ;)
