Title: Hi from East Texas

Hi, my name is Jani.  I live with my family on 12 acres in East Texas.  I have been making cheese for a couple yrs now.  In the last 6 months I bought 2 Jersey cows.  I tried goats first and just can not get the goat taste out of the cheese.  My aim is to make all our cheese.  I make yogurt, buttermilk, butter, sour cream, cheddar, colby, Caerphilly, Monterey Jack and Montasio.  I really wish I could make a soft cheese with the texture of Laughing cow, but oh well.
I wanted to say hi and hope to learn from all you cheese makers out there.  I haven't found my people interested in making cheese and am looking forward to sharing ideas.

We moved from Spring to East Texas last yr.
I don't know what he goat taste thing is.  I just can't get over it. YUCK!  But i am very happy with my Jersey's!  Plus you can do so much more with cows milk since it is easily separated!

Hello from Celina! I have been making my own yogurt for about 2 years. I'm making sour cream and cream cheese at the moment; my first attempt at making cheese. They are sitting here in my warm office. I'm excited about making other cheeses, getting started with some simple stuff.
