Title: Cheddar - White mold.

Hey hey!  ;)

3 days ago I made my first Cheddar. But during 3 days
of drying, before waxing, white mold grew on the cheese.
I need to wax it today, but I don't know why it happens
and what to do. Need your help, thanks! :)

When this happens to my drying cheeses, I scrape off the mold with a knife and rub with brine to discourage further growth. 

Often I rub my drying cheeses with a pinch of dry salt to discourage mold. I am interested to hear what others do.

Saturated, your not looking to wash the rind but to eliminate whats ever on it (which is sensitive to salt)
Make sure your wax is hot so it kiils anything on the surface.

If it continues to be a problem you can also wipe with a little vinegar dosed with salt.

Thanks! I washed it with saturated brine and then waxed.
We will see what it will be after 2 months aging.  ;)
