Am so pleased to have found this forums. Already have put in a post and got some really good advice. Am new to all this cheese making but having so much fun doing it. Finally found my thing!
Am in a suburb called Abbotsford in Melbourne, Victoria. Have tried my hand at Haloumi that has worked really well, some camembert which was good but texture was not quite there, a brie that made me quite happy and a parmesan that I can tell you about in another year!! But so many more to make.
I look forward to hearing all your advice and becoming a really good cheese maker!!

Welcome Richard! :) Great to have another Melbournian on the forum. I think I have already communicated with you re your Camembert/Brie post.
I'm also quite new to cheesemaking, having started in May this year. Mainly Camemberts so far, and made my first Fetta last weekend. Planning to try blue bries next and then some blues and washed rinds. I'm impressed that you have already tried a parmesan! I'd like to have a go at hard cheeses too, but will need to get a press first.
Lots of little tricks to learn, which is where this forum comes in very handy. So many different ideas and suggestions to keep you thinking and experimenting. I reckon there is a lifetime of learning in cheesemaking. Have fun and be sure to post any questions as well as photos of your results. :D :D
