A washed rind I am particular chuffed with, flavour and texture is very creamy.

It's more impressive if you know it's only a 75g cheese, single serve.

Only 75g? I'm interested. Can you offer any details on your make or affinage? I would expect a shorter aging than say, a 1.5-2kg wheel. I like that idea of a smaller, discrete washed-rind cheese suitable for gifting.

Unfortunately I can't give any details of the make or affinage as it's proprietary and part of my employers intellectual property.  It's not easy though, we've had lots of people try over the years and they usually ran into ripening issues, either drying out, poor microorganism growth or excessive ripening that lead to a short shelf life. 

I'm really happy with this one though, it's only my second attempt at cracking it.  It has a flvour and texture similar to traditional Muenster.  The choice of ripening cultures is critical though, I think I'm probably allowed to at least say that.
