Title: bloomy rind chevre is turned around!

Thanks to detailed advice from here my 1st bloomy rind chevre has started to bloom.Today(1/22) was day 5 in aging box.I have been turning cheeses each day and tapping down the mold.My question now is: How long in my aging box?What should I see happening to know it is time for the next process?And am I correct that the next step is wrapping in ....(?)wax paper/parchment paper,plastic? and putting in refrigerator?Then how long?At this point I am pretty much in "science experiment" mode and have no instructions that I am fallowing except for the tips and coaching from here.Thanks for the help.

Yes, you can wrap it now. Chevre is best eaten between 1 and 2 weeks after the make.
