While I take a break in my sausage while the smoke I need to get supper ready so I think we will have pulled pork sammies. No bread so I will make Italian Feather Bread Rolls. I love that stuff and it's so easy to make.

Italian Feather Bread With Whey
1 cup warm water (100°F to 115°F)
2 packages active dry yeast or 4 1/2 teaspoons
1 tablespoon sugar
5 1/3 tablespoons butter cut in small pieces
3/4 cup hot whey or milk if you don't have fresh whey (120°F)
2 teaspoons salt
5 1/2 to 6 cups sifted flour
1 to 2 teaspoons butter and cornmeal for sprinkling
1 egg white lightly beaten
Combine water yeast and sugar – let stand until yeast dissolves and begins to proof (becomes bubbly).
Meanwhile melt butter in hot whey or milk and let cool until lukewarm.
Add salt, then combine to yeast mixture. Stir vigorously with a wooden spoon.
Add the flour 1 cup at a time until dough almost comes away from the sides of the bowl (dough may be soft and stick-it will stabilize). This is usually about 4 cups for me.
Turn out dough onto lightly floured surface. Add flour in small quantitiesuntil dough had absorbed enough flour and is easy to handle.
Knead for 3 to 5 minutes keeping hands well floured. When the dough is soft and smooth as a babies bottom let it rest for 5 minutes.
Divided dough into 2 pieces if making loaves or 6 pieces if making rolls.
For loaves: Roll each half into a rectangle about 12 x 8. Roll the dough starting from the wide end tightly pinching the ends. Make light slashes o the top of each loaf - about 3 or 4.
For rolls: Roll each piece into a small long sandwich roll. Make light slashes o the top of each loaf - about 3 or 4.
Butter one or two baking sheets and sprinkle with cornmeal.
Place dough on sheets and let rise until almost doubled (50 – 60 minutes).
Preheat oven to 425°F.
Brush with beaten egg white and bake 30 to 40 minutes or until the loaves are a rich golden color and make a hollow sound when tapped with your knuckles.
Cool on a wire rack and slice while fresh.
To make onion garlic buns take dehydrated onion flakes and dehydrated minced garlic add a few spoons of water for just enough time for them to soften. Then add a bit of the egg wash and spoon it on the buns after they've baked for about 20 to 25 minutes. you don't want to burn them. Fresh onions and garlic just seem to get soggy for some reason and don't crisp up.

You need t work with one of the people I work with. I haven't had my lunch to myself in 6 years unless she is not working or it had a spicey peppery component. i pack lunch for two everyday. LOL
I have a buddy I sent treats to for lunch, but she sends me treats as well! I guess you could develop a taste for chili peppers on everything?

LOL I usually smoke them with Butter, Salt, Paprika, Red cayenne pepper, Garlic and other spices if want them hot and spicey - but that could be another post.
You reminded me of when my daughter was little and had just figured out how to get up onto the counter so she could help herself to what ever was there. I worried that she would find and eat something dangerous, but also knew she was to little to be reasoned with. So I opted to let her learn for herself why that was a bad idea. Next time I made 15 bean soup, I put all the fixings in a bowl and I made sure the hot spices were on top... black pepper, chili pepper... I wandered off to a different room and sure enough my little bandit went tip toeing into the kitchen to help herself to the unguarded fixings. :o Needless to say there were no more problems of that nature!

I don't sell bread although I do occasionally include it with my catering gigs. I do sausages, lunchmeats, BBQ, and a bit of catering for friends and family and friends of friends and family. My training is from the CSHK (Culinary School of Hard Knocks). Also do some cooking for a few local soup kitchens when I am neeeded but not trained in anyway except being a Mom.
Well I am sure that your kids feel lucky to have you! Amazing skills.....well done Debbi - I´ll be sure to check out your site often! Keep it up.

I was making Romano cheese on Sunday and looked at my big pot of whey and decided to try your recipe. It turned out really well. My husband loved it and has been after me to make more. It was an easy recipe to follow and I had it made and rising in no time.
