I bought this cheese last week and it has made me start thinking that it might be time to try some moldy cheesemaking (I have stuck to hard pressed cheeses mostly since I started 18 months ago).

I loved the mild flavor and creaminess of this...but haven't found a recipe. Can anyone offer a recipe or a suggestion for a similar cow's milk cheese that might be a good starting point for a moldy newbie?
