Title: Ladle - Amco Brand Straining Stainless Steel 8 Ounce / 225 ml
Post by: Cheese Head on February 22, 2012, 12:45:33 AM
Recently been making Camemberts using standard 4-1/4" / 11.0 cm inside diameter hoops and ladling curds into hoops using standard cheapo smallish kitchen ladle.

So like the artisan cheesemakers in France I ordered myself a larger stainless steel ladle hoping it was the same diameter as the hoops, but with the bonus of a built-in strainer for reduced whey transfer to the hoops.

Just got it today, great quality, heavy duty, when held level it just fits 8 fluid ounces/225 ml, but it's not round, it's oval!! And they just dropped the price from USD15 to 12!!

Anyway expect it will still work well. Unit's cup outside dimensions are 4-3/4" / 12.0 cm x 3-3/8" / 8.5 cm. Total length is 13.5" / 34.5 cm so not a very long handle for size of cup. Will reply here how well works after next batch.

Put this tool into service in current Camembert make. Did not work great in pre-whey draining curds in ladle when ladling curds into Camembert hoops. Worked OK but didn't pre-drain much whey quickly as not many drainage holes versus amount of material.

Went back to scooping curds out with medium plastic sieve then as sieve too big for hoops, dumping curds into ladle then using ladle to place curds in hoops.
