Hi,

I live in Québec city, in Québec, Canada. I just finished a degree in agronomy and now looking for work. And.. I'm French speaking, so forgive me if I make mistakes !  ;)

I just received all I need to make some cheese, I want to try Feta and also Camembert, maybe light cream cheese too.

Talking about Camembert.. I was wondering... on this recipe :

It says 2 US gallons = 4 liters... shouldn't it be 2 US gallons = 8 liters ? just want to be sure

And also, I was wondering if anybody knows where to find some sheep milk in Québec, that I can make cheese with ?

Bonjour and welcome Andree, I am certain with a little research you will find some high quality milk in beautiful Quebec.  If you ever travel south into NY stop by our farm and take a look at the adventures of cheesemaking in our micro dairy (it is more hard work than when I owned a restaurant).  I happen to have perfected goat and cow feta, so feel free to ask questions, I only wish I could get some inexpensive sheep's milk for the ultimate feta.

Bienvenue Andrée, my family and I were in your beautiful city 1.5 years ago while on holiday & looking at colleges for our second daughter (she chose Queen's in Kingston). Will be happy to visit again some day, hopefully in winter!

I had to look up Agronomy (http://en.wikipedia.org/wiki/Agronomy), now I know, sounds very interesting. I just fixed that typo, 2 US gallons/8 liters will make ~ 5 standard camemberts. Also there is some further info in our Wiki: Cheese Yield (https://cheeseforum.org/articles/wiki-milk-cheese-yield/) article.

Sorry no idea on local sheep milk availability, you could try posting that question in the Canada > Quebec board as many of our members don;t read the Intro's posts.

zenith1, I can't wait to start :) Just waiting to receive mini-spoons to put the right amount of culture in the milk

george13, I have some friends who have dairy farms and I could get some milk from them, but since it's not legal for them to give some of their raw milk, they might want me to make cheese only at their house.. not very convenient since they live 1h30-4h00 from my house! And I don't know any sheep farmers yet.. I was hoping to find some sheep milk in groceries, good enough to make cheese with. Meanwhile I'm going to use store-bought cow milk. I would be very interested (and a few of my friends too I'm sure!) to come visit you! If ever I have the chance to come, I will contact you for sure :D

John, yeah, a lot of people says "Huh?" when we say we study in agronomy... even in French haha! And now that I'm done with the degree I must confess I would prefer to be the farmer instead of the agronomist ! Maybe one day .. Quebec city is very nice! But in fact I'm born in Toronto and lived in Montreal for almost all my life except for the past few years. I will post my question in the board you mention, and thank you for the precision about the yield

Just thought I'd say hello - from another Canuck. I'm from Newfoundland, live in England, but soon moving to Nova Scotia. Anywho, in conversations with folks into sheeps milk in NS I know there definitely is a good supply of sheeps milk available in Quebec - some cheesemakers in NS in fact buy it in from there (frozen). I will ask when next I speak to someone in the 'know'. Who knows, when I get settled I may have a small milking herd myself, though I'm more partial to goats  :o

Hello Heather, thanks! I would absolutely love to know where they take their sheep milk !  :D 
If I like making cheese enough, maybe I'll have a little milking herd too , but I don't really like to have to milk every morning and every evening... we'll see !

Welcome aboard Andree.
My grandmother was from Montreal and most of Dads family from Great-granfather back. Beautiful city. Can't help you with the sheeps milk. I tried finding it here too but when I did they wanted my first born son for it! Good luck on your search.

I was at Neal's Yards cheese shop in London today and the clerk was from Montreal. She confirmed that there's sheep milk for sale in Montreal - you could consider emailing this shop and seeing if she any direct info (her name is Andrea)?

I contacted La Moutonnière, but they say their milk wouldn't be fine for cheesemaking. They sell it in 1 L, pasteurisation at low temperature, but 1% skim milk... and that it would be too expensive for making cheese (without giving me a price).

--> I know we can make cheese with 2 % cow milk if it has not been ultra pasteurised/pasteurised at high temperature, but would it be possible with 1 % sheep milk ?

Still waiting for an answer from Neal's yard.
