Hello All!
I was really pleased to find this site as my fiance and I just started to get into cheese making. I've already gotten some help from another Pensacola user who posted suggesting to go to Evermans Co-op Grocery to get raw milk, so thank you!
Our first adventure was with mozzarella, which turned out less than perfect. I think that although publix milk doesn't say "ultra-pasteurized", it still may be. Our cheese turned out more the consistency of butter than cheese even after icing it and cooling it about twice as long as the recipe called for.. It tasted fine but we had to smear it on the pizza we were making rather than cut slices.
I'm waiting on our first batch using raw milk to cool down now, so hopefully that will turn out a little more cheese-like.

Welcome Sunchild. Many people have trouble with mozzarella for some reason. The traditional recipe works better and waiting is the hardest part. I have poor grade cheese if I use WalMart milk here even though it is not supposed to be UHT either. When you find a bad milk don't go back.
