Title: Hello from Kansas!

Have made quite a few soft cheeses and wanted to advance. I just made a proper press to make semi-soft and hard cheeses, successfully made a cheddar but couldn't wait long enough to age it and it is half eaten in my fridge.  Looking into getting a wine fridge for aging soon as well.

I'm a home brewer as well!

My favorite beers are Belgians.  My favorite kinds of cheeses are anything blue.

Welcome DannPM, lots of blue fans here, there are some Wiki's (https://cheeseforum.org/articles/wiki/) that should be useful, the Search function (how to optimize in the FAQ's Board then ask away!
