April 1st was the day i started cheese making.  My lovely wife bought me a one day cheese making cause at "Red Hill Cheese" making Blue, Ricotta and sour cream.  BEST PREZZY EVER....The people up there where great. ;D

I have made 4 Blue vain cheeses so far and making 3 more tomorrow.  My cheese cave already looking pretty good. 
I have been All Grain brewing for near 8 years so have no trouble with sanitation.  I know the importance of temperature control..
