Been lurking for a few months and decided to register to your lovely website. Lots of knowledge and refreshingly nice folks here!
I'm a professional brewer by trade (surprisingly similar techniques between beer and cheese) and have been making cheese for the last six months or so with quite good results. I am pretty well equipped for cheese making, most of my stuff procured from Glengarry Fine Cheese in Lancaster Ontario. I took their artisan course last month and had a blast! My shortfall at the moment is a ripening cave which was the reason I joined up. Just to keep organization tight I will start a post in the correct section. Just writing first to say hello.
