Hi,
I'm a pizza maker and since is impossible to find fresh mozzarella or at least good mozzarella here I want to make my own and with time I will try to make others cheeses too.

Yesterday was my first try in making mozzarella and I end up with something like Queso blanco (curds didn't melt) and after searching on the web I find this great site that already gave me some ideas for my second try.

Many people have trouble with mozzarella take you time don't rush it and you should be fine.

Welcome! the type of milk has a lot to do with Mozz. If you can get raw milk it will help. good luck. I had problems with my first batch too. lol.
