Title: Hello I'm a maker, not a cheese maker and love eating and learning about cheeses

Just joined today. Been reading up on blue cheeses and epoisses and a lot of google links just keep directing here. Will have my hands full reading all the past posts. Hope I will have something to contribute soon but mostly I'll probably just be lurking or posting OT things when appropriate.

Welcome to the forum! A little warning: Blue and epoisses are not the easiest cheeses to start with! Do you have access to raw milk?

El Hombre - in my general ignorance of Spanish, I think that means the man. ElZombre then is the zombie man.

I have no concrete plans to make cheese, I'm just lurking to read and learn more about the techniques. But when I do try my hands, I've learned enough from previous DIY misadventures to start from the beginning  ;D
