Title: Frozen milk - can I make cheese?

Hello,
I bought 20 litres of milk to make cheese today but the water and power went off on the farm here so I was not able to make it. Now the power and water is back but I am going away for two days and don't have time to make the cheese now.

Could I freeze this milk and make the cheese with it next week? Alternatively I may be able to fit it into the fridge and keep it for three or four days (the cows were milked this morning and the milk was chilled immediately to about 6 degrees c) but I would rather freeze it.

Could anyone advise me about this please?

I used to make cheese from frozen milk all the time.  As I was new to it, I can't say if it affected anything or not, but I did get some good cheese.

Oh thanks Karen, this is good to hear. I have to get up in the dark to go to the dairy farm some distance away and often thought I would like to freeze enough milk to make cheese on another day too. This helps.

I suppose the structure of milk would change in the freezing process, as it does when it's pasterised or homogenised. I wonder if frozen milk will need calcium as those do (it's raw milk).  I will experiment. (Unless you happen to know?)
