Raffine?

So, I am intrigued by this cheese I saw on NE Cheesemaking.com.   https://cheesemaking.com/collections/recipes/products/raffine-cheese-making-recipe.   I am most interested because it looks like dessert to me.  (I know it's not).. but it's so pretty and pink.  I was wondering if anyone had made anything similar?  Better yet, has anyone used the above recipe for it?  If so, do you have any suggestions?
