Sausage of the Month

My daughter and I have started making sausage once a month, after her wonderful father-in-law found a great old sausage stuffer at a yard sale. We made 15 lbs. of Italian sausage last month, and Saturday we made another 15 lbs. of Mediterranean sausage, and 15 lbs. of Bramberg style bratwurst, which is one third bacon. It's a great way to use up the ends and pieces from my bacon curing. This time we remembered to take a couple of pictures. My grand daughter Ryan is helping mix.

You were my inspiration, Deejay! Just needed a real stuffer! The attachment for the KitchenAid is a toy. The Universal makes quick work of 30 pounds. Also, got my casings from Czapiga's in Meriden, the kielbase kings. Every one was at least six feet long, much better quality than the little home pack from Butcher Packer. He gets his from BP, too, but the real hanks.

ooo, DH saw a grinder at a swap meet once and it was $50... he called and asked if i wanted it, but the friend he went with had wanted it for his wife too, and they won :( so no snags for us yet!

I normally buy hanks online from Cabela's (they don't carry them here in the store) but they have gone way up on their prices. Found a new place in NY that's very reasonable and free shipping from Syracuse. They even have sheep casings on a tube so you don't have to fight the little buggers when making snack sticks. They tangle so bad I hated using them.

Those Universals are great! Heavy as all get out but parts are always avalable for repairs if needed.

LOL But cheese and sausage go well together! While your cheese are aging you can make sausage and many don't even have to age!

Ellenspn that's what I was saying couple of years ago when I saw Debi's pictures and recipes. I now have a kick ass grinder, an SS sausage stuffer and cultures in the freezer. Don't see it as another hobby, it is another step towards the healthy eating for you and all for your family  ;D

Well the family consists of 2 humans and 5 dogs! Any home made treat (except for liver) is best homemade. I can't stand the smell of liver and braunschweiger is pretty strong motivation for my smallest sheltie :P

I do have a kitchen aide but don't want to burn out the motor.
