For those of you that have Caldwells book with the white bloomy rind cheese on the cover at the bottom, can anyone tell me what they think the dome shaped cheese that is cut in half could be?

It was just a demonstration of the various forms you could use to drain your lactic curd cheeses. Look at pages 170 and 174.
