I've been eyeing a screen from a scrap space heater for months. Put to use yesterday. I flattened it, trimmed it square and rolled it up, I used a small can to hold the ends. 14" x 2.5"
I tested it on a 250g piece of Leicester I made last October. In a BBQ grill using apple pellets it made smoke for 4 hours. It was pretty heavy smoke and the cheese has a pretty smokey smell and golden color. I know that will mellow over time but I still think it's a bit much.
Even in this Mississippi heat
the temp stayed at 90 F at the cheese using an ice bath.
I'll be testing again today with a piece of Gouda. Trying less fill vertically (1 in rather than 2), less time and more air. I'll snap a pic of that setup today.
