Mushy, Smashed texture of Fresh Mozzarella ball 125g
« on: July 11, 2018, 06:50:36 AM »
I recently bought Italian Fresh Mozzarella ball 125g and when I open it, I found it was too soft that I couldn't cut for salad. Ball shape is smashed, have mushy texture. I couldn't even recognize if it is cheese or cream. Please find attached picture.
The EXP date of cheese is JUL 19th, so 9 days left among 30 days of whole shelf life.
So I asked the supplier and they said there was no change on recipe or ingredients. Since this item was delivered through cold chain, there is no possibility exposed to room temperature.

So I believe its salt% or moisture % might exceed or less than usual..

Is there anyone who experienced this kind of issue?
Could you advise me what could be the cause?

It went soft in the brine they use in packaging. Either the milk was poor quality or the brine wasn't propelry balanced in either pH or calcium chloride. Still safe to eat but will be very soft and goopy

POOR quality control. Change brands.

Is it possible that it froze? I've frozen mozzarella without having problems with it but never in a brine solution.
