Trouble With Cheddar Knitting?

I'm working on making some cheddar and I'm having issues with the pressing. I'm kind of a newb, this is my second attempt at a hard aged cheese.  After pressing, my cheese looks like the attached image. It looks like it's still not knitting together right. I used a 4" diameter mold, pressed at 1 PSI for a half hour, 2 PSI for an hour, and then about 8 PSI for 24 hours. Is this cheese acceptable to wax and age? If not is there anything I can do to seal the gaps with something? Any thoughts on what I might be doing wrong? Thanks.
