Wild Garlic Cheese

It's wild garlic time here in the chilterns, so I decided to make some wild garlic based cheese.

I used Gavin Webber's sage derby recipe, scaled to 6 litres milk and with 100g of wild garlic replacing the sage.

Looking good so far...
