Looks interesting. Can it be controlled manually without using the SmartChef Cloud Services or without using a smart phone, etc.?

The temp range is 50F to 80F and humidity range is 30% to 92%.

Yes, it can be controlled manually if preferred. There will be presets for specific cheese types as well.

That looks and sounds very cool! Is there a possibility that sunlight passing through the clear exterior would allow uv rays to pass through and potentially kill microorganisms?

No – the transparent covering stops UV rays that would cause any problems. Also, UV rays indoors is very unlikely in the first place.
