My micro cheese plant

I made a video to share the cheesemaking experience with my customers.  I believe this is probably one of the smallest licensed cheese plants in existence.

The milk I use is frozen raw sheep milk.

Hello!  I have seen your posts via NEC's blog website.  I live not too far from your area and hope to meet you at one of your food truck gatherings in Reno this summer.  Thanks for sharing the video of your cheesemaking process.  I'm a big fan of sheep milk, as I raise a small flock of sheep, milk occasionally when the opportunity arises, and know what great ice cream and cheeses it makes!  Sure hoping your enterprise in Nevada fares well (I'm thinking it will).  And looking forward to trying some of your cheeses.  --Susan

Your horizontal curd harp is exactly what I would like to have...an *aha* moment when I saw that part of the video...did you make it or where do you find such handy tools?  (I'd probably have to make one to fit my 2-gallon pot).

Terry Beckman built my curd knives for me.  His email is terry@curdknives.com.  He will build curd harps to any dimension you would like.
