Help me choosing my first mould

So I am planning to make my first hard cheese soon, but cheese moulds are very rare in my area, I can only find 2 types 1 is 10cm ø x 8cm tall, the other is 20cm ø x 9.5cm tall, the smaller one only have 4 holes at the bottom, both of them have the follower for pressing.

Problem is with 20cm ø I would need to apply pressure about 25kg for the last press if I am not wrong (I don't have any cheese press to do this safely). And I don't have big enough pot to heat up the milk (About 15 litre or about 4 gallons).

What my plan is to try with the small moulds first and try to age it in a vacuum packed and with the vegetable drawer in my standard kitchen fridge drawer (I can manage the temperature to be around 10C). And if I am doing well and got more interested in cheese making, I'm thinking of buying the whole setup.

Bigger pot, bigger mould, cheese press, wine fridge for cheese cave, etc.

So is it possible to make hard cheeses using a small mould? Weighing only about 300 grams, idk maybe colby? cheddar? or easier hard cheese to try for a beginner. What do you guys recommend?

You can't go wrong with these, I bought the biggest one, use it for all my 5 gallon hard cheese
