Using mesophilic aromatic type b for hard cheeses?
« on: May 30, 2020, 01:21:37 PM »
So, does anyone know if I can use mesophilic aromatic type b for hard cheeses? The package says it's for soft cheeses (fromage blanc, etc).
I cannot find other types of mesophilic in my country, I'd have to import.

Yes you can, although it produces a bit of gas, so you will probably get some small eyes in the cheese.  To be honest, it's not really a big deal what you use.  It will make cheese.  Will it be exactly like a classic cheddar somewhere?  Probably not, but it doesn't really matter.  For me, just make lots of cheese with whatever you have and then think about how you would like to improve it.  If that means importing cultures later, then you will know exactly why you are doing it.

Nice! Thanks for the info.
For a beginner I'm not going to expect classic cheddar result. I'm just interested in making my own cheese. I guess you're right, I'll just have to give it a try.
