The way I look at it, cheese is literally milk with water and sugar removed. If you eat a kg of cheddar, that's the same (assuming 10% yield) as drinking 10 liters of milk. No way that's ever going to be good for you :-). But if you eat 25 grams of cheddar, it's the same as 250 ml of milk -- a cup. It's literally all in the portion size.
