Spray Inoculation?
« on: April 13, 2021, 02:12:57 AM »
I am trying the NE cheesemaking CamBlu.  This cheese has one spray PC and GC on the cheese.  I have read comments in which people say they have never had success with spray inoculation.  SO, I was wondering what tips those of you who've done this successfully have to offer so that I might be equally as successful.

Thanks!

I've used it and it worked very well.  I believe I made a 1% brine solution and added a small amount of PC and geotrichum to it.  Then I put it in a very fine mister.  It's not a spray bottle really.  It makes a very fine mist.  I waited a few days before using it.  Stored in the fridge, it seemed to work for several months, which was nice.

Thanks!  Hopefully the mister I ordered will be fine enough.

I've done both adding to milk and spraying/rubbing the cheese with it and they all work.  I don't tend to spray inoculate now because the cultures are big enough that I rarely finish one before I should replace it.  The exception is blue (P. Roqueforti) which I culture from a commercial cheese although I'm sure I could figure out a way to direct inoculate that also.
