Texture gradient

I guess i need help to understand what is happening to these cheeses. This is a Prato type of cheese (similar to Gouda technology) that has 15 days of ripening - between 9 and 12oC. Theo process has been adjusted to make soft pastes but at the end the cheese has an evident texture gradient. What do you think about it?
