Pizza Bread - Great for Grilled Cheese Sandwiches!
« on: October 23, 2021, 08:01:13 PM »
My wife bakes a lot of bread, some from scratch and some using a Bread Machine (less time consuming).... Her Sourdough from scratch, using an 8 year old starter is awesome, and she does Cheese bread, Cinnamon Raisin, Cracked Wheat, Multi-grain bread, Onion bread, Pumpernickel, Buttermilk and Honey, and Oatmeal in the bread machine, and Cinnamon Buns which start in the bread machine but are baked in the oven.... A while back she came across a recipe for "Pizza Bread" which was from scratch, and then modified it so that it can be made in a bread machine.... The "extras" are chopped up Pepperoni, Mozzarella, Parmesan, and spices.... Here is the recipe, with the changes for a bread machine shown in red....

Red indicates changes if making entirely in your bread machine (no Oven)

Use a Bread Machine on the dough cycle and bake in the oven. OR use the Rye setting on bread machine (#6 on mine)

1 cup warm water
¼ cup olive oil (2 ½ tbsp. olive oil)
1 tbsp. sugar
1 tsp. salt
3 cups All Purpose flour
½ tsp. garlic powder
½ tsp. minced, dried onion
½ tsp. dried basil
½ tsp. Italian seasoning
½ cup shredded mozzarella cheese
½ cup grated parmesan cheese
½ cup pepperoni, chopped
2 tsp. bread machine yeast (1 ½ tsp. bread machine yeast)

Place the ingredients in the bread machine in the order given above.  Set machine on dough cycle. OR set bread machine to Rye setting and turn on – the machine will do everything from here.  All you have to do is take it out when it has finished baking.)

When done, turn the dough onto a floured surface and punch down.

Flatten into a rectangle, patting to get out the bubbles.

Roll tightly into a log, turn seam side down and place in a lightly greased loaf pan.

Cover with a towel and place in a cold oven with a pan of hot water on the bottom rack.

Let rise 45 minutes or until double.

Bake in a preheated 350° F oven for about 30 minutes.  It should sound hollow when tapped to indicate it is done.

Remove from loaf pan and brush margarine on the top surface of the bread.  Cool, slice and enjoy.  Your house will smell like a pizza parlour while you are making this.  YUM!

When making Grilled Cheese Sandwiches, we use a cast iron skillet, grease lightly with Bacon Fat (for non-stick and flavour), butter the OUTSIDE of the slices, and use a cheese that melts well.... So far we have had success with our own Havarti, Edam and Gouda....
