Nuts

 Just to say hello, I am a newcomer, Self exiled in the boonies in Northern Thailand, hoping to assuage the great Thai cheese famine and make my own, we will see wish me luck. Whilst I am here I would be grateful for one little nugget of info, this is maybe a very basic question if so I apologize in advance, is it not possible to add nuts to dairy cheese during the process? Does it affect the cultures behaviour?? and upset the process or just generally does not produce good results. I ask because I have scoured the web and every time I get articles on cheeses made from nuts!! Its exasperating to say the least, be would be nice to have a definitive answer. Take care

I can’t think of any reason for it not working. Here is link of one for sale so it must be possible , though this could have had the nuts added after aging , and be more like a spreadable cheese .

I could for sure imagine the flavors of fresh chèvre rolled in  crushed nuts , yum .
