Waxing And Aging Cut Cheese?

Could I make my cheese, cut it say--in half, wax the two halves separately, and then age them for different times? For example, this way I could taste a batch after one month and a second half after two months and easily see which I like more.

I have done that, and it works fine.... My normal procedure is to wax the whole wheel, and when I want to sample, cut off a quarter and the vacuum bag the remainder, repeating until it's gone....
