Recipes for 10 lbs wheel.

Anyone got a good recipe for making a 10 lb wheel of Emmental?
I have a great recipe for 2 lbs. I want to scale up. So, mainly I am wondering
scale up the ingredients and trying to figure out about the weights on the press.
anyone have any ideas.

Check out Peter Dixon's website. His are mostly in 12 gallon batches.  And excellent recipes at that.
