I'm looking for a good Danisco Choozit substitute for Flora Danica. I have a good selection of different Choozit cultures and I must be able to use one of these (or a mix) instead of Flora Danica...

I'm thinking...
- MM 100
... or...
- A mix of 2 parts MA 14 and 1 part MD 88

It is to be used in white mold bloomy rind cheeses. I will make them using a picante rennet paste to give them a little edge...

Any advices?

Hi Al,

Thanks for the link. I know the chart but I just hadn't thought of it. :-)

I think that I'll just go for the MM 100.

I looked at them the other day and I believe they stated that they were practically the same. ???
