Hispanico with saffron from January

Opened one of my hispanicos with saffron from january. As with most of my other cheeses it had been vacuum packed. Not sure if that's why it had a bit of an off taste. Well I'll let it air for a day or two and then we'll see...

I think the "off taste" stems from the saffron. I experienced an off-putting character to my Saffron-Infused Hispanico.

I think saffron works well in company with other components in cooking, but when isolated in a cheese...it overpowers.

Other cheeses have been made and consumed, but this Hispanico may still be lurking in my fridge...somewhere. :o

I think that you are right. It must be the saffron overpowering...
